The Pear & Thyme Martini

The drink the whole place is named after. Pear and thyme, pair and time. Say it out loud.

These pours are where I make it. Taste yours and move the syrup and lemon around until it is yours too.

How it goes
  1. For the syrup: bring the sugar, water, and thyme to a simmer, stirring until the sugar dissolves. Off the heat, let the thyme steep 20 minutes, then strain and chill. Keeps two weeks in the fridge.
  2. Shake the gin, pear nectar, thyme syrup, and lemon hard with ice for 15 seconds.
  3. Double strain into a chilled martini glass.
  4. Lay a sprig of thyme across the rim, and bruise it once between your fingers first so it smells like the drink tastes.

Make it yours

  • Vodka instead of gin for a cleaner, quieter version.
  • Top with a splash of sparkling wine for a taller celebration pour.
  • No alcohol: the nectar, syrup, and lemon over ice, lengthened with soda.

The bruised thyme garnish is not decoration. It is half the aroma of the first sip.
