Pineapple Mezcal Margarita

Smoky, tropical, and a little charred if you take the extra step. This one converts the people who say they do not like mezcal.
How it goes
- Rim the glasses: run a lime wedge around each rim and press into Tajín.
- Shake the pineapple juice, mezcal, Cointreau, lime, and agave hard with ice, in two rounds if your shaker is small.
- Strain over fresh ice.
- Garnish with pineapple and lime. If you have a hot pan or grill going, char the pineapple wedges first.
Make it yours
- Blanco tequila instead of mezcal for a brighter, less smoky glass.
- Blend with ice for the frozen version on the truly hot days.
